A thermostat in simple words is a switch that blocks the entrance of coolant into your engine. It will allow for the engine to reach normal operating temperatures (200F), before allowing the cooling system to do it's job.

Why do I need my thermostat replaced?
When your thermostat is stuck open, coolant immediately starts cooling the engine when you start your car. Your engine will never reach perfect operating temperature, leading to issues like cold cabin heat or a poor fuel economy.
Even worse then that, your thermostat can be stuck closed preventing coolant from coming in even when your engine is bulging red. Of course this will lead to a catastrophic break down.
